The Coppers is a concept born out of years of experience from formerly operating “Heathers Garden Restaurant”.
Heather and Wayne decided to re-open with a new look and feel – Two restaurants in one. One fine dining, offering international cuisine surrounded by fine works of art and the other a casual bistro dining under the stars.
Hugely passionate about the hospitality industry, having trained in Hotel Management. Heather operated “Heathers” for almost two decades, having spent the last 20 years as a pilot “In the Air” she wants to bring the “International approach” to dining, cocktail and wine experience at the Coppers.

Chef Maragh was formerly trained at Wales and Johnson – He brings years of experience to fine dining. His breadth of knowledge and desire to exceed guest expectations is at the forefront of his approach to food service.
